Broccolini and Sweet Corn Salad




Made this from the leftover veggies in the fridge, turned out surprisingly good.

1 corn cob
1/2 lb broccolini
1 tbsp chilli flakes
2 cloves garlic
salt, olive oil etc

Scrape corn kernels off the cob with a knife.
Blanch broccolini in salted boiling water till al dente, drain.
Heat oil, saute chili flakes and garlic.
Add corn, some salt, toss around 2 min.
Add broccolini, toss around some more on high heat.
Add lemon juice at end, serve hot.
