
Another old one from the Thai-themed dinner. For a main dish add mixed sauteed veggies (carrots, green beans, bell pepper, mushrooms).. or even tofu, egg or chicken
6-12 oz. rice noodles enough for 2-4 portions
2 Tbsp. oil for stir-frying
Thai Pesto Sauce
1/2 cup fresh basil (it's like tulsi)
1/2 cup fresh cilantro
4-5 tbsp chopped lemongrass
1/3 cup dry roasted unsalted cashews
3-4 cloves garlic
4 Tbsp. (1/4 cup) oil
1 Tbsp. lime juice or lemon juice
1 Tbsp. soy sauce
1/4 to 1/2 tsp. dry chili flakes
1 tbsp toasted sesame seeds
salt
Garnish:
handful fresh basil or cilantro chopped
handful of chopped cashews or peanuts
1 tsp red chili flakes
Prepare pesto by combining all ingredients in a blender/food processor and grind (there should be some texture)
Cook noodles in salted water, drain and add to a non stick pan/wok with a little oil.
Optional: Add cooked veggies, stir fry for a minute to heat
Add some pesto, mix gently for the sauce to coat... add more if necessary.
Add more salt/soy sauce/lemon juice or chili to taste. Toss in sesame seeds.
Garnish with nuts/chili flakes and cilantro/basil before serving.
