Shrimp Nicoise Salad


Another farmer's market concoction. There's this guy who sells fresh spot shrimp and salmon, and the shrimp are really great.. so we got a couple of pounds and decided to try a variation on the classic Nicoise Salad. The green beans were from a friends garden.

8-10 cherry tomatoes, halved; some cubed heirloom tomato
one large potato; boiled in salted water, peeled and cubed
1/2 lb green beans, trimmed, steamed, cut in 2 inch pieces
shrimp; peeled, deveined, marinated in garlic, lemon juice and salt; sauted till just cooked.
a small sweet white onion, slivered
a few pitted black olives
lemon juice, olive oil, mustard, salt, pepper; crushed garlic whisked together
2 boiled eggs; halved, optional
Toss together all the ingredients except for the eggs, top with the egg if you are adding it.
