

Got some ripe heirloom tomatoes and fresh basil at the farmers market and fresh wild alaskan salmon that's in season. So I decided to make something very simple, that would highlight the flavors of the ingredients.
Salmon fillets: season with salt and lemon juice, set aside.
Dice tomatoes, add salt and keep for about 15 minutes. Collect the liquid from the tomatoes (it can be a lot if they are ripe and juicy). Pass through a sieve to remove most seeds.
Heat olive oil in pan, toss tomatoes for a couple of minutes to warm up. Add the juice of the tomatoes.
Grill or pan sear salmon till medium done. Add to tomato mix in pan.. heat through. Add torn basil leaves, and a dash of olive oil. Can add chii flakes if you like.
Serve warm, or cold.
This can also be made with some other white flaky mildly flavored fish.. use any pther green herb like parsley or cilantro or fennel greens.
