We had to fire up the grill for 4th July, but did not want to do a traditional barbeque. So we settled for something different and made this Stew, which was great with chardonnay.
2 tablespoons olive oil
1/2 pound hot Italian sausages
1/4 cup chopped shallots
4 garlic cloves, chopped
1/4 teaspoon dried crushed red pepper
8-10 halved cherry tomatoes
1 cup dry white wine
2 tablespoons lemon juice
1 1/2 pounds littleneck clams (about 3 dozen), scrubbed
1/4 cup chopped fresh parsley
2 tablespoons lemon zest
Grill sausages, halve lengthwise and slice.
Grill clams in a large pan 10 -15 min, till they open (discard any clams that do not open).
Heat olive oil in heavy large pot over medium-high heat. Add shallots, garlic and dried red pepper.
Sauté about 5 minutes. Mix in wine, lemon juice and lemon zest, boil 5 min till reduced.
Turn off heat and add tomatoes.
Add clams, clam juice (strained) and sausage.
Mix and garnish with parsley.
Serve with warm crusty bread and a tomato basil salad.
