
It's been cold and cloudy here in the bay area, and nothing sounds better than a warm bowl of soup. This is going to be a staple for a few months, so I need to be creative.
Here's something I tried tonight... it's all vegetarian and is based on a simple Tuscan recipe.
1 tbsp olive oil
2 large cloves garlic
1/2 medium white onion diced,
1/2 cup spelt
1 medium carrot diced
one medium potato, diced ( i used 6 baby white potatoes. halved)
6 oz frozen spinach (I should have used fresh dino kale or swiss chard but did not have any)
flesh from one carnival squash, diced
water or broth
salt etc
Saute onion and one clove of garlic on low heat, add spelt and let it toast for a couple of minutes.
Add squash, carrot and potato, saute some more.
If you use fresh kale or chard, add it at this step and saute couple of minutes.
Add water/broth, salt to taste and simmer util spelt is cooked.. add more liquid as necessary.
Simmer for about 15-20 min, the spelt usually requires 20-25 min.
Add frozen spinach at this point if you are using it.
Simmer another 15 min, add one crushed garlic clove and serve.
You can drizzle with some olive oil and serve with crusty bread.
It was warm and comforting, but I would have preferred it with dino kale like it should have been.
