1/2 cup white wine
1/2 cup warm water
1 ½ ounces yeast
1 tablespoon honey
1 teaspoon kosher salt
1 tablespoon extra virgin olive oil
3 cups all-purpose flour
Combine wine, water and yeast in a large bowl and stir until dissolved. Add the honey, salt and olive oil and mix thoroughly. Adding 1 cup of the flour and make a wet paste, leave it for 15-30 min. Add remaining flour and knead into a dough.
Place dough on a lightly floured board and knead for 2 to 3 minutes. Put dough in a lightly oiled bowl and cover with a towel. Let rise for 45 minutes, I have left it for upto 5 hrs. If you leave it longer punch down every couple of hrs.
To make pizza, divide dough into 4 pieces, let it sit for a bit.. roll out as thin as you'd like it on a WELL-FLOURED pizza peel.
Add topping and slide onto a pizza stone that has been heating in a 450-500 F oven.
Cook 10-15 min till done.
