Glazed Rainbow Carrots



Got the most beautiful bunch of carrots I had seen in a while.. they were a mixture of purple, white, yellow and orange carrots and looked very appetizing.

Basically, I peeled the carrots, sliced them diagonally and sauteed them in olive oil with some cumin seeds, craisins, salt and a little water. Towards the end I added chopped carrot greens, lemon juice and some lemon zest. It was really simple and the cumin really spiked the flavor. Have made this before with baby carrots and that was good too.
