Coconut Yam


Got a couple of white and orange yam, boiled them in a bit of salted water.
Took a pan with some unsweetened dessicated coconut.. heated that till the coconut was toasted. Added some olive oil, some chopped green onion (you could use leeks) and the diced yam and tossed it around till the yam had browned somewhat.
