Balsamic Christmas Lima Beans


Christmas lima beans are are flat, but almost an inch long, look really beautiful and have an interesting texture and a sweet nutty flavor.

Soaked about 1/2 lb of beans overnight. Today I boiled the beans in salted water till tender.

To a pan with some heated olive oil, I added some crushed garlic and rosemary, sauteed till garlic browned, added some balsamic vinegar and them the beans and heated through. It was mild and slightly sweet, some pancetta might have made it tastier, but I wanted it light to complement the roast pork and it did just that.
