
A very simple, healthy salad with ingredients we usually have at home....another old one that we first tried at a restaurant.
1 cup cooked red lentil (akka masoor), salted and with the grains still intact
1/2 cup diced red onions or spring onions with the green parts
1-2 chopped green chili
1-2 crushed garlic
2 tbsp lemon juice
2 tbsp olive oil
Salt to taste
chopped parsley 1/4 cup (or cilantro)
Optional: one diced tomato
Mix well, season to taste, refrigerate until serving
Serve cold with naan or somewhat crispy parathas, broken up into small triangular bits.
